Position opening for the role of “Senior Scientist” with Air Protein, Inc. (“Air Protein”), headquartered at 2020 Williams Street, Suite B1, San Leandro, CA 94577. This is the main location out of which this role is based. Position is permanent, immediately available job opportunity that does not require any travel to client or customer sites. Telecommuting benefit (i.e., work from home) is not available. Position of “Senior Scientist” is not a supervisory role, and therefore, does not directly supervise or manage subordinate, direct reports. Position is a hands-on, individual contributor role.

The “Senior Scientist” position is part of the Protein Biochemistry team at Air Protein, and is responsible for establishing and characterizing the composition of our microbial biomass using multi-omics and other approaches. Traditional job description reflects duties performed as follows: developing and implementing processes for evaluating the functional behavior of protein ingredients made from air; designing small-scale functional assays to increase screening throughput for protein ingredients; building new capabilities for identification and quantitation of proteins and peptides from complex microbial matrices; developing methods to extract, analyzing and screening for the function of novel protein ingredients; performing protein characterization using various techniques; documenting batch to batch variability, analytics, and establish quality metrics; purifying endogenous and heterologous proteins from diverse microbial sources; delivering research and innovation through journal publications or patent applications; and, train, mentor, and lead the Protein Biochemistry team from the lab bench.
Position requires a Ph.D., or foreign equivalent, in life sciences (i.e., biology, biochemistry, material science, chemistry, molecular biology, microbiology), or engineering (i.e., chemical engineering, protein engineering, biotechnology engineering). Requires two years of progressive, post-doctoral experience in the food or biotechnology manufacturing domain. Also must include two-years of experience in all of the following: (a) wet-lab skills with demonstrated ability to design and run scientific experiments; (b) using method development for the detection and quantitation of proteins; (c) fermentation and protein downstream processing procedures; (d) understanding of regulatory, product safety, and quality requirements relevant to the development of commercial food products, and (e) protein functionality and application to food production systems to include the following, to wit: (1) design and creation of experiments to characterize the functional properties, to include: (i) gelation, and (ii) emulsification, and (iii) water and oil binding capacity, and (iv) solubility, and (v) foaming capacity, and (vi) stability; and, (2) quantification of protein state and thermodynamics using differential scanning colorimetry, and, (3) characterization of functionality traits using rheometry, including (i) viscosity, and (ii) viscoelasticity, and (4) utilizing a texture analyzer.
