Essential Functions and Responsibilities:

Start Up
  • Walk through barn looking for any humane animal handling issues.
  • Inspect chute and restrainer
  • Inspect pneumatic knocking gun and hand knockers with bullets.
  • Verify Preventive maintenance and blast test on pneumatic and hand knockers.
  • Verify that the Knock Box Daily Operational Check audit is completed.
  • Communicate with USDA during antemortem inspection. Utilize Barn Pen audit. Need to audit each pen location a minimum of once per week

During Operations
  • Observe the 1st 10 head knocked for effective stunning and insensibility.
  • Ensure 100% inspection of bull knocking.
  • Verify that daily operations audits are completed.
  • Verify records throughout day to ensure information is being recorded properly.
  • Observe procedures of knocking in barn, as often as possible.
  • Continuous communication throughout day with USDA, QA and operations.
  • Coaching of QA tech and operations throughout day
  • Verify Inclement Weather Log is being completed.
  • Continuous monitoring of pens throughout day.
  • Verify dead stock a minimum of once per production day. Verify that audit is being completed by barn personnel.

End of Production
  • Verify all audits have been completed and turned in.
  • Record review audits for accuracy.
  • File audits.
  • Walk through of barn to ensure proper density of pens, water, feed.
  • Communicate with barn personnel about animals that will need to have feed.

Weekly
  • At the end of the week complete Final Scoring audits on the form Final Scoring-Cattle and Calves Audit Core Criteria.
  • At the end of the week complete Final Scoring on the form Final Scoring- Cattle and Calves Audit Secondary Audit Items.
  • Organize weekly meetings with plant personnel to discuss topics regarding humane animal handling.

Monthly
  • Conduct odd hours of inspection at a minimum of once a month. Observe at least one truck being unloaded if possible. Use Transportation audit form.
  • Walk through barn and look for any animal handling issues.

Training
  • Train barn personnel or QA on humane handling.

Bi-Annually
  • Review recommendations and deviations and provide corrective actions and changes to program if needed.

Marginal Functions:
  • All other duties as assigned

Knowledge, Skills, and Abilities:
  • Experience in a meat production, preferably in a harvest facility
  • Experience with Quality Assurance in meat production

Education, Training, and Licenses:
  • Associates or Bachelors degree in Animal Science or related field a plus.
